The classic "canestrelli" in my opinion are much more crumbly, an ancient recipe.

the grated zest of 1 lemon

a pinch of salt

Sift the two egg yolks and add them to the softened butter, add all the other ingredients and work but not too much. Wrap with cling film and leave to rest in the fridge for an hour.

Roll out the dough with a floured rolling pin and form the biscuits.

Bake at 170 degrees static for 12 minutes. They just have to color.
